There are two ways to get Eggs for your settlement. One way is to purchase the Chicken Coop backyard extension, and the other way is to import Eggs from a trading post.
Eggs are produced from a Chicken Coop backyard extension. To get eggs, you need a burgage plot large enough to accomodate a backyard extension. Next you have to purchase a Chicken Coop backyard extension for 25 Regional Wealth.

You can use any size of land for your Burgage Plot, as size does not affect the yield of Eggs. You only need 2 Timber to begin construction.
How to Upgrade Burgage Plot Levels

If you have a surplus of Regional Wealth, you can opt to build a Trading Post and import Eggs directly. This can help supply Eggs to your Marketplace and by extension your burgage plots, especially if your settlement has grown too large that the demand exceeds your current supply.
The Better Deals development node gets you a discount on importation prices. This could help you save on Regional Wealth, especially if you plan on importing multiple items.

Eggs are a food resource you can only acquire by getting the appropriate backyard extension. The amount that your burgage plot can yield will not depend on the size of the extension.
Eggs are automatically distributed to your settlement using food stalls. Eggs are a great addition to the variety of food and over time it can be one of the ways you can attain a self-sustainable colony.
A steady supply of Eggs will also lead to more food stalls in the Marketplace fulfilling the requirement for upgrading a Burgage Plot.
