As soon as the season changes to Winter, reassign families to jobs that are important to survive the season. Re-allocate villagers who are assigned to tasks that cannot be performed during Winter, like Farming and Foraging, so that they're not sitting idle for three months.
Just remember to switch them back to their original jobs when it rolls back around to Spring, otherwise, you might be producing too much of one resource that you don't need.
Once Winter arrives, you will no longer be able to grow crops or harvest berries. Make sure that you stock up on other sources of food, like Meat, Eggs, and Bread, inside your Granary so that your village doesn't starve.
Also, you'll want to stock up on fuel sources since villagers will use twice as much fuel during Winter. Build around one or two Woodcutter's Lodges so that they have enough Firewood to survive the season.
If you only have a single source of food, your villagers have a higher chance of contracting a disease. Try to diversify your food sources to minimize the risk of this happening.
If ever a villager does get sick, you can use Herbs to cure them. However, this cannot be farmed during Winter, so make sure to stock up on them beforehand.

Charcoal is a more efficient source of Fuel since it only costs 1 Firewood to make 2 Charcoal. This nullifies the doubled fuel cost in the Winter, making it much easier to meet the Fuel demands of your villagers.
Do note that you'll need the Charcoal Burning Development to unlock the Charcoal Kiln needed to make Charcoal.

If you need extra resources to survive the season, you can always build a Trading Post to import resources. This also lets you sell your excess resources, allowing you to make back whatever you're spending.
If you've researched Foreign Suppliers, you can also build Firewood and Food Carts to passively import Firewood and Bread at the cost of some of your Regional Wealth.
If you start the game in either Autumn or Winter, or if you've started a settlement in a new region, you'll want to build housing for your citizens as soon as possible. If you don't, they will quickly freeze to death without any housing or Fuel.
You can provide lodging for your villagers by either building Burgage Plots or converting the Homeless People's Tent into a Worker Camp.
Unlike the other three seasons, Winter can be deadly for your town since sources of food become limited and your villagers use extra Fuel every month. If you haven't properly prepared for the cold, you could easily lose your citizens from either starving or freezing to death.
