Ares May Not Likely Return, But Will Possibly Be Mentioned
There has been no confirmation that Ares will come back nor make a physical appearance in Hades 2.
Possibly Mentioned by Other Characters
Ares has been mentioned by Eris during one of her interactions with Melinoe, sharing her thoughts on how the god of war must be thrilled to be faced with a war against the titan Chronos.
He may also be alluded to by other characters in Hades 2, as he was one of the few Olympian Gods bestowing Boons to Zagreus during the first game.
Ares Backstory
God of War, Offered Boons for Zagreus in His Journey
Ares was described as the God of War in the first game, and was one of the Gods that assisted Zagreus on his journey by offering him Boons to upgrade his skillset and weapon in battle.
Ares was shown to be enthusiastic when discussing with Zagreus about the countless beings he had slain throughout his repeated attempts to escape the Underworld.
The god of war was true to his title, and was willing to do everything in the name of war and violence.

I think the last stage going up will be Olympus and we'll see the three missing Olympians there with possibly some titan bosses that chronos summoned, one of the dialogues for the god mentions chronos' ally being very hot which could be the titan Prometheus or less likely Hyperion.
