How to Get Animal Familiars
Trigger Hecate's Dialogue
To acquire your first Familiar, you have to defeat Hecate at the end of Erebus. She will eventually trigger a voice line and give you the Faith of Familiar Spirits incantation.
Hecate Guide
Chant the Incantation
Head back to the Crossroads and use the cauldron. The Faith of the Familiar Spirits grants you the ability to turn beasts into Animal Familiars. It also grants you one Witch's Delight that you can use immediately.
Feed Them Witch's Delight
Once you have Witch's Delight, head towards either Frinos the Frog near your tent, or Toula the Cat in either Erebus or Rift of Thessaly. Feed them the snack to turn them into an Animal Familiar.
Keep in mind that you can only get Frinos and Toula for now as an Animal Familiar.

Frinos the Frog is the first pet you meet throughout the game. His abilities consist of being capable of blocking projectiles, dealing damage to his foes, and increasing your Max Life.
Automatically Compel Shades Using Frinos
Once you've acquired Frinos as a familiar, you will be able to approach a Shade and hit the interact button to have Frinos compel a shade for you without playing the minigame.

Toula the Cat can be acquired as a familiar by petting her a number of times as an interaction option in Erebus and bonding with her by the docks at the Rift of Thessaly using Witch's Delight.
Her abilities are an increase in healing on Death Defiance, additional Fishing Rod usage, and dealing damage to her foes.
Automatically Catch Fish Using Toula
Once you've acquired Toula as a familiar, head towards a Fishing Point and hit the interact button to have Toula catch a Fish for you without playing the minigame.
