Cave Houses are great inital homes to build in Minecraft since you won't need too many resources. The walls and roof will already be set, so you'll really only need Torches and some furniture to make it presentable. They'll be easy to expand in all directions since you'll just need to mine further to make it larger.

If you've progressed heavily in Minecraft, it may be time to take on the challenge of building an Underwater House. The difficulties with this are your slow movement speed, your need to resurface every now and then, and the darkness of the sea. Use Enchantments, Magma Blocks, Glowstones, Sponges, and Conduits, to make building here easier.
You'll be able to make extremely creative and unique homes that'll definitely stand out. You can even connect it to an underwater Shipwreck!

Building Tree Houses allows you to create structures that look like they came right out of a fantasy novel. You can build them with same type of Wood block so that it can blend in, or make it stand out with some unique block choices.
The towering nature of a Tree House gives you great views as well as an easy way to set your next destination. You're also safe from mobs here since they won't be able to climb up. For further expansions, you can connect several trees together, each with their own structures.

If you want to make trips to the Nether safer, you can build a house near your Nether Portal where you can store whatever tools you'll need when exploring this dimension. Placing a bed here also makes it easier to recover your items if you die in the Nether.

A creative home to build that would certainly stand out would be a Mushroom House. You'll need to primarily use Red Mushroom Block and Quartz Blocks to make it closely resemble a Mushroom, so this may take some effort in Survival. If successful, however, you'll be able to make a cute addition to your world.

Building a base in the End can be difficult due to the lack of blocks that can fit with the style of the world. You'll want to have some rarely used blocks in your inventory such as Purpur Blocks and End Blocks. Once you have those, start making a house that fits in with the grimness of the End. You don't want to stand out like a sore thumb by using plain Oak Planks here
