The most common way to obtain Knockback is through an Enchanting Table. You'll need XP and Lapis Lazuli to enchant an item.
Placing bookshelves around the Enchanting Table will increase the possible enchantment levels of an item. There must be one block of air between a bookshelf and the Enchanting Table for this to work.
Head out into open water and use your Fishing Rod to catch items with Knockback enchantments. The Luck of the Sea enchant will increase your chances of catching enchanted items.
You'll find Knockback in Treasure Chests in structures and dungeons around the world. Make sure you're properly equipped with armor and weapons since these areas will be infested with Mobs.
You'll be able to trade items with villagers to obtain Knockback. Librarians will be your best bet since you can trade Emeralds for enchantments even at Novice levels.
You'll have to level up other Villager types to obtain their enchanted stock.
Knockback difference of unenchanted and enchanted Swords
The Knockback enchantment is great for getting distance away from enemies. If you find yourself getting overwhelmed by mobs, you can knock them back to get space and time to reposition. This is particularly helpful for bow users, since you can switch to your Sword and shove enemies away to give yourself space to reload.
Keep in mind this won't increase your sword's damage.
The Knockback enchantment is similar to Punch, which instead adds a knockback effect to your Bow. You'll have a fearsome combo by using these two enchantments with their respective weapons.
