Metal Gear Solid Delta: Snake Eater introduces Snake vs. Bomberman, a new additional mode where Snake faces off against Bomberman as side content. This mode was not present in the original MGS3, which instead included the Snake vs. Monkey mode.
Snake vs. Bomberman is exclusively available on the Xbox Series X|S version of the game, as Ape Escape—from which Snake vs. Monkey was derived—is owned by Sony.

Another new mode added to MGS Delta is Fox Hunt. This online multiplayer mode, set in the same environment as the main game, challenges users to utilize stealth and survival skills against other players.

The Secret Theater is another feature that makes a comeback in MGS Delta, containing both original and newly created videos for the game remake. To unlock these videos within the Secret Theater, players must collect 8mm film canisters found on enemies.

The remake adds a new third-person over-the-shoulder view, which makes aiming firearms much easier compared to the original's overhead view.
Players can choose their preferred camera style, opting for either this New Style or the classic Legacy Style. The first-person view also remains an option in the game for precise aiming and detailed observation.

Movement in MGS3 was limited to just standing or crawling while prone. One big difference in Metal Gear Solid Delta is the addition of crouch walking as a new movement ability that allows Snake to move while staying low to the ground, offering greater tactical flexibility for stealth and evasion.

Snake vs. Monkey returns in MGS Delta with improved controls and enhanced graphics. In this mini game, Snake must capture all escaped monkeys.
This mode is only available on the PlayStation5 and Steam versions of the game, with Xbox Series X|S users receiving the Snake vs. Bomberman mode instead.

The remaster's modernized controls and quality-of-life improvements make key actions like changing Snake's camouflage and accessing the Codec significantly easier via new shortcut buttons. Additionally, overall firearm use feels more fluid, thanks to these broader control enhancements.
Out of all the upgrades and new features, this is probably the biggest diffrence between MGS3 and MGS Delta; that is, how much easier it is for new players to hop into a two decade old Metal Gear Solid title.

While the original MGS3 had the Survival Viewer for Snake to take care of his injuries, Metal Gear Solid Delta significantly upgrades this concept.
The battle damage system now makes the deterioration of Snake's clothes and any sustained injuries permanently visible on his body in real-time, including bruises and bullet wounds.
These marks persist throughout the entire playthrough, serving as proof of each player's distinct journey through the game.

The entire game is rebuilt in Unreal Engine 5, drastically improving visuals, lighting, character models, and environmental detail compared to the PlayStation 2 original and the HD Collection version launched back in 2023.
