Snake vs. Monkey is unlocked from the start and can be accessed directly from the Main Menu screen.

All stages except for Escape From the Jungle are initially locked until you progressed the main story. To unlock rewards, it's recommended to complete the main story first before playing Snake vs. Monkey.

The goal of each stage is to simply capture all monkeys scatttered across the area. To catch one, equip the Monkey Shaker (EZ Gun) and shoot to knock any of the monkeys out. Once they're stunned, walk up to them to capture them.
In some stages, you will find multiple monkeys next to each other. Equip the Stun Grenade and throw it at the group to knock them all out at once.
If you are struggling to find them, you can scan the area using the Directional Microphone. Aim it in different directions until you hear monkey sounds, then follow the noise to locate them.

Astro Bot must be captured in every stage to unlock the secret reward. In most cases, he is easy to spot, but in some stages he will disguise himself as one of the monkeys. Use the Monkey Shaker or Stun Grenade to knock him out, then approach to capture him.
If you're playing this minigame for the rewards, then rest assured that getting a high score is not required. All you need to do to get all the rewards is to make sure you complete all stages and that you find the Astro Bot in each stage. So, take your time and find all the monkeys if you're only in it for the rewards.

Clear all 7 stages to unlock the Banana Cap Equipment. You can use this in the Main Game, but it has no gameplay Effect.

This is a secret reward where you need to capture Astro Bot in each stage. Doing so will unlock the Banana Cap (Gold) Equipment. You can use this in the Main Game, but it has no gameplay Effect.
