Zois with normal or good Karma head immediately into the afterlife when they die. The afterlife basically means that the Zoi cannot be played anymore and disappear, at which point you'll have to continue playing with original family or select a new family to play.

When a Zoi with bad Karma dies, they must remain as ghosts in the city with the goal of doing good deeds and redeeming themselves before they can go to the afterlife. As of the Early Access release, Ghost Play has not been fully implemented yet so more info on this will be added later.
Playing the Zoi as a ghost is entirely optional but will have consequences for your city when there are too many ghosts.
You can try out an unfinished version of Ghost Play through a bug where you repeatedly press the Esc button while going through the death menus when a Zoi dies.
This will enable you to play your Zoi as a ghost that can only move around the city but has no character model and unable to interact with anything. You'll also notice that your ghost only has Karma as their Need referring to how you need to redeem your dead Zoi to pass on.
All Bugs, Glitches, and Known Issues
As stated in one of the windows that pop-up when you die, having too many Ghosts in your city will make it harder to add new Zois. This means that if you leave your dead Zois as ghosts without redeeming them, it will affect your ability to create new Zois for the city.
Whatever happens to your deceased Zoi, you'll always have the option to continue playing with your Zoi's remaining family members.
If the Zoi that died was the only Zoi you have or have left, you'll be given the option to select a new family to play within the city.
Another option you can always do is reload a previous save to when your Zoi was still alive. In the death menus, this is referred to as the option to Go Back in Time which basically means the same thing as reloading.
