Use the race rules above to have the best chances of attacking five Riders with the UFO Copy Ability.
Set the CPU riders to 7 and CPU level to 9 so you have more targets to hit. Increase the number of laps to 99 to extend the race (you don't need to complete all 99 laps) until you succeed. Set Items to Normal since this option doesn't increase the spawn rate.
The UFO is automatically granted to the rider in last place, so hang back when the race starts. It also has a high chance of appearing if you remain at the back.
You can attack with the UFO by pressing the B button. While active, it grants a speed boost, allowing you to catch up and attack opponents easily.

If you're having difficulties with this objective, you can simply use an Open Block to clear it immediately and obtain the reward. Open Blocks are obtained by performing certain feats during races.
