Use the race rules above to have the best chances for stealing two items as Daroach in a single race.
Set the CPU riders to 7 and CPU level to 9 to have more targets to steal from. Increase the number of laps to 99 to extend the race (you don't need to complete all 99 laps) until you succeed. Set Items to Few as you won't be able to steal while holding an item.
How to Unlock Daroach and Best Machines
Maintain Position Toward the Back of the Pack
At the start of the race, stay near the back of the pack to make stealing items easier. Daroach will automatically attack and attempt to steal from opponents carrying items.
Wagon Star Not Recommended
Any machine is viable when attempting this Checklist objective. However, the Wagon Star is not recommended because it cannot boost charge, making it difficult to keep up with opponents and to avoid picking up items.
