The stats were taken at the Garage, unaffected by any Rider's stats. But, the numerical values are estimates as they are not shown in-game!
Battle Chariot takes advantage of Daroach's high Offense stat and matches it with high bulk, allowing them to play aggressively with little risk. The decent Turn and Grip stats allow Daroach to position well and line up steals with their Special.

How to Steal 2 Items In a Single Race
Steal From Behind
To steal 2 items in a single race with Daroach, create a lobby with the highest number of CPUs at maximum level with as many laps as possible to increase the chances of stealing.
Once the match starts, stay in last place and let them collect the items in the track, then attack from behind in melee range to perform a steal.
