Yama Tsukami have 2 phases which are its normal state and open mouth.

This is the state Yama Tsukami starts with and visually it has a closed mouth. In a head-to-head, it will always use a Power attack so make sure to counter it with a Speed attack of your own. Make sure to only attack the tentacle parts because aiming for the valve only reduces its wyvernsoul gauge and will prolong the fight further.
It will keep rotating between 7 pre-determined attacks until you break the two tentacle parts. Once you've broken said parts, it will immediately transition to the Open Mouth phase at the end of the turn.

In this state, Yama Tsukami will open its mouth and will randomly use two skills for 6 turns. Wait-'n-See is a skill that does nothing or a Speed attack which you can counter with a Technical attack. Make sure to focus on destroying the mouth and ignore the valve part.
At turn 7 and each of its multiples, it will unleash a devastating AoE non-elemental attack so make sure to destroy the mouth to transition it back to the Normal state.

Despite not being able to reduce its HP, Yama Tsukami is weak against Ice and Dragon attacks which makes Aurora Somnacanth a must have especially in the Open Mouth state to deal more damage to the parts and destroy the part before 6 turn pass. It uses Technical attacks to counter Yama Tsukami's Speed attacks.
As for the Power attack coverage, you can use Astalos to deal significant damage thanks to its high attack and wyvernfell stats.

In this fight, you cannot reduce the HP of Yama Tsukami and the goal is to destroy parts within a limited amount of turns before it wipes your party. Use Hammers which has skills that can deal heavy damage to parts. Use any Hammer you want based on what you have or needed because all hammer has the said skill you need.
As for the recommended armor, use Arzuros Armor using materials after you defeat Arzuros. It has an innate resistance against non-elemental attacks and has a passive to further reduce damage from all attacks. This will help you survive attacks and live longer if you are not able to destroy any parts in time.
At this point of the game, you can use Ogden or Eleanor equipped with a Hammer to help you deal damage to parts. However, you need to complete the Chapter 2 side stories of Ogden and Eleanor so you can unlock their secondary weapon.
Yama Tsukami will keep attacking your party until you destroy its parts. You will inevitably take damage for the duration of the fight so make sure to stock up some healing items or use a Hunting Horn with the Soothing Song skill.
During the Normal state, you only need to focus attacking the left and right tentacle part to progress the fight. It is important to ignore the valve part as it does not benefit you.
During the Open Mouth state, you only have 6 turns to destroy the mouth before it uses a skill called Yama Tsukami Pull that deals high AoE damage to your party. If you are at or below level 25, you will die from it no matter how strong your defense buffs are.

You can encounter Yama Tsukami during the A Valuable Encounter main story quest. It is exactly located inside Dragonreach Mountains.
