Star Wars Outlaws will allow players to modify how difficult the story can be. There are 4 types of story difficutly settings: Explorer, Adventurer, Outlaw, and Scoundrel.

Outside of story instances, Star Wars Outlaws will also allow players to fine tune certain aspects in combat.
You will be able to change enemy difficulty, increase or decrease player health, and modify how the difficult the Wanted System of the game is.

Minigames from Lockpicking, Hacking, and Galactic Street Food can also be changed. This difficulty setting dictates how precise your inputs need to be when playing minigames in Star Wars Outlaws.
Setting the difficulty of the minigames to the easiest option essentially reverts the minigame to a button mash that'll lead to an automatic pass.
All of the difficulty settings in Star Wars Outlaws can likely be modified in the Gameplay Experience settings menu of the game.
From there, you can select and toggle among the available options to suit your desired difficulty for the best experience.
For players that want to focus on the adventures of Kay and Nix, we recommend selecting the Story difficulty.
However, if you want to approach both story and combat in a more balanced approach, we recommend selecting the higher difficulties present in the game.
