Aim for the Head
Chunk's main weakness is its head. Target its head to deal tons of damage and finish the boss fight faster. It should be easy to aim for his head as Chunk doesn't dodge and will run straight to you.
Use the MSBG 500 Shotgun
Before the boss fight starts, the game will allow you to pick up the MSBG 500 Shotgun next to Chunk and the corpse its eating. You can use that to deal a lot of damage against Chunk. You can grab Shotgun Shells around the area whenever you run out of ammo.
Attack with the Hatchet Once Down
Chunk will go down after taking enough damage from your guns. You can use your Hatchet to deal significant damage against it after it goes down. It should only take 3 Hatchet attacks to kill Chunk, meaning you'll only have to down him thrice.

Trap Chunk Using the Doorways
Chunk can get trapped in the doorways in the fighting area. You can lure Chunk there for a free firing angle. Make sure to still aim for the head to deal the highest damage possible.
Chunk Boss Fight Rewards
Two Hand Grenades
You can get 2 Hand Grenades for beating Chunk. These Hand Grenades are a valuable resource as you can use it on the zombies at the end of Leon's playthrough in this area.
