Corner your enemies so they won't get away. aND, kind of also depends on the type of attack you're trying to pull off. It's worth to note Cloud's Ability Focus Thrust required your boy to jump before it launches its attack so yes,, enemies will take their time dodging that.

there are some enemies who are quick on their feet. they might secretly have invisible roller blades implanted on those sneaky feet. XD
Playing this game for 3 days now and what can I say?? Timing is very important in this game. Wohh. Strong attacks will go to waste, if your enemies are dodging experts.

Ohh And I forgot to mention but not entirely sure but i think you can only do this after you complete the whole story and use the Hard Mode feature.
Not sure if this is what you want BUT they have this Chapter Select function. HOWEVER, you can only use this when you have a saved data (per chapter)

i'll likely keep doing battles after battles then read the story later on (if they have this feature) ONE SHOT
well, we can play the game at our own pace. i personally like savoring the story of RPGs. if in anyway ff7 remake has an option (or maybe i haven't discovered it yet) to like repeat the story scenes.. there are some RPGs with this feature.. i'll mostly like use it.
