You can get the Untouchable Trophy and achievement during the Shrine Vault puzzle, as you're progressing the second chapter of the main story. Fortunately, the attacks of the Shackled Monster are telegraphed, on top of having only two movesets, so dodging, perfect dodging, and countering its attacks are, in no way, difficult.
Shackled Monster Enemy Guide and Info
The Shackled Monster has two movesets; an overhead, downward swipe, and a flurry of 9 swipes. Its overhead attack is the easiest to counter in the game since you only have to press the counter button the moment it starts glowing red. The visual cue for this attack will trick you into countering right before the swipe lands, however, the game registers the counter only when the it starts glowing red, so it's important to keep this in mind when it stands upright!
The other attack of the Shackled Monster is its flurry attack where it swipes at your direction for a total of 9 swipes, last of which is the only counterable swipe out of the 9 attacks. When it does this attack, do not counter or attempt to perfect dodge since it'll only cost you a good chunk of stamina, thereby making you more vulnerable the farther you explore the Shrine Path.

Alternatively, you can 100% avoid butting heads with the Shackled Monster and take advantage of it being blind, which means as long as you don't produce any sound (walking, switching weapons, etc.), and are only walking (or moving) when the monster is not within earshot, then you can easily get the Untouchable achievement and go about solving the Shrine Vault puzzle without getting spotted.
This method of getting the Untouchable Trophy is obviously more tedious and long-winded than the first method, however, for casual players who are only in it for the experience without the stress of mastering the souls-like elements of the game, exploiting this mechanic will guarantee you bagging this achievement!
During our playtest in the Shrine Path area, we noticed that the Shackled Monster can jump, and thusly, can keep up with you no matter where you are in the map. This means that, say, you've avoided the monster in the northen area of the Shrine Path, you can still encounter it in the far-southern corner of the map.
Additionally, Hinako will breathe heavily and the audio will drastically change and become foreboding when the monster is nearby, so make use of these audio cues to know when to stop moving.
Even if you keep yourself from producing sounds, the moment the Shackled Monster gets in contact with you, it will auto-aggro and attack Hinako. And since it only walks in a straight line, somewhere along the middle of pathways, we strongly suggest to steer clear of the middle pathways, since you cannot reposition yourself when it's nearby.

Regardless of which method you pick, it's important to manually save your progress each time you get the correct ema for the Shrine Vault puzzle. There are only three Hokora Shrines in the Shrine Path, which are fortunately spaced decently from each other, so visiting them to save your progress should be easy!
