You can buy the Character Edit Voucher as a DLC wherever you're playing the game. One Character Edit Voucher also comes free with the Iceborne DLC!

With the Character Edit Voucher, you can completely edit your character from head to toe, whereas you can normally only edit the hairstyle and makeup in-game. And yes, you can even change their gender.
