Saved games can be found in the settings. Read on to learn how to save a game session and if you can turn off autosave.

The Callisto Protocol - How to save 1
To access the settings with a mouse and keyboard, press the ESC key or START button for controllers, then select Save Game.

Select New Manual Save.

The Callisto Protocol - How to save 3
After selecting new manual save, the game will prompt Saving in progress, Do not turn off power.

The Callisto Protocol - How to save 4
When it's finished, you'll see your save at the top, where you can manually load the game. 

Game Will Still Start At The Last Checkpoint

For players who are unaware, manually saving the playthrough will not save where you were in the game. The game will still start at your last checkpoint no matter where you save.

Unfortunately You Can't Turn It Off

Autosave is designed to withstand sudden changes in the player's environment, such as power outages, sudden hardware failures from the computer or console, and software issues. Autosave is there for a reason, so that players won't need to lose hours of playthrough.
