Dragon Golem, similar to other Boss Monsters, can only be tamed by giving it one of its preferred items. If you do not have any Starfall Potatoes, you can fish for Rockfish and Sand Flounder in Thundering Wastes. Note that if you do not tame Dragon Golem within 10 attempts, you will have to reload your save file or try again on another day.

Use Your Brush to Tame Dragon Golem More Easily

You can use your brush to increase the probability of taming Dragon Golem. You can brush a monster up to 15 times, so if you're having a difficult time taming monsters, this option can be useful!
