Priority is a denominator that determines whether a move will always be faster (increased priority) or slower (decreased priority) than other moves available in the game.
Increased Priority moves have largely contributed to the meta aspect of competitive Pokemon, as they enable momentum and provide players with an advantage over speed.
Being able to attack first with moves like Fake Out automatically puts you at an advantage, especially in Doubles.
If two moves of the same priority level are used by two players, the faster Pokemon will always move first. The same mechanics apply to moves with decreased priority, however the slower Pokemon will go last.
Even under the effects of Trick Room, the priority of these moves will still be followed. Meaning moves like Extreme Speed will still go first under its effect.
