We are still catching all the fishes, stay tuned!
Each fish in Destiny: Rising is defined by its rarity, which determines both how hard it is to catch and how much it sells for.
What you catch also depends on the bait you use. Common bait will mostly attract common fish, while rarer bait increases your chances of reeling in higher-rarity catches.

Occasionally, you may reel in a shiny version of a fish. Shiny variants are rarer and sell for more than their regular counterparts.

You can interact with the cat and feed it any fish you have caught while Fishing. This is another use of fish, especially if you don’t want to sell them.
Not all Cats like the same type of fish, since each one has its own favorite. Catch as many fish as you can to increase the chances of finding out what they prefer.

Keep in mind that not every fishing spot is available right away. To unlock more locations, you’ll need to level up your fishing experience by catching fish at accessible spots. Start at the Haven pond to build your skill, then progress to other areas as your fishing level increases.

Fishing becomes available after progressing through the main story and completing Chapter 2-1. This unlocks the sidequest “Go Fishing”, which serves as the tutorial and grants permanent access to the fishing minigame.

You can sell your catches in exchange for Angler Tokens. Open your Ghost Menu, select Inventory, then scroll to the Consumables tab to find all your fish.
The selling price varies depending on each fish’s rarity and whether it’s a shiny variant.

Another use for fish is feeding them to cats you encounter in Haven. Each cat has a unique preference, some may like certain fish while rejecting others.
Catch a wide variety to improve your chances of finding their favorites.

suggestion, start building a database of which fish is of what quality for the cats requests, (ie, colour, location, flat, or other variables i may be missing) flat seems like the most obtuse one so far.
