Even if every Platinum Trophy requires you to unlock all the other achievements, there are steps you can take while playing the game to make progress towards this goal. As long as you keep the key points mentioned below in mind, it'll be easier to complete and unlock every trophy in the game.
The following table shows a summary overview of each action you can take towards unlocking a majority of the trophies and achievements for DQ1&2 HD-2D Remake.

There are a ton of trophies that are unlocked simply by playing through the story of both games. As long as you do this, and aren't sidetracked exploring or farming, then you'll make good progress towards getting the Platinum for Dragon Quest 1 & 2 HD-2D Remake.

There are trophies in both games that require you to defeat a ton of monsters. As long as you're exploring the world and aren't avoiding random battles either by running or using Holy Protection, then these trophies should be unlocked naturally.
However, if you haven't defeated the requisite number of monsters and want to unlock the respective trophies immediately, you can go to a low-level area and farm monsters if you want.

Similar to the monster trophies, both games require you to get a certain number of items to unlock an achievement. Again, as long as you're exploring, you should naturally come across enough chests, Sparkly Spots, and Secret Spots to get the trophies.

Another requirement for the Platinum Trophy is to learn all spells and abilities in both games. The hard part of this is finding all the necessary scrolls to complete this achievement, so make sure you've explored every nook and cranny of the world so that the only spells and abilities that you'll need are those learned via level up.

Aside from items, equipment, and scrolls, you'll also want to look out for Mini Medals while exploring. Collecting all of them across both games is another pair of trophies to unlock, and they also reward you with items, like equipment and scrolls, used for other achievements.
Once you're in the later parts of either game, it's recommended to farm Metal Slimes so you can earn a ton of EXP to level up. Besides becoming stronger and making it easier to hunt for other trophies, there's an achievement in DQ2 that requires you to kill at least 10 Metal and/or Liquid Metal Slimes.
After completing both games, there will be new post-game activities that are unlocked. These are tied to a bunch of hidden achievements and contain major spoilers, so make sure to seek them out and finish each one so that you can unlock the Platinum Trophy.
