Though the only path to victory in Dragon Quest 1 HD-2D Remake involves defeating the Dragonlord, simply doing so all on your own only leads to the game's Good Ending. To see the True Ending, you'll want to bring Princess Gwaelin along for the ride, which means you should not return her to Tantegel Castle and beat the game with her in your party.
However, you'll need to take some specific steps to ensure you see this special ending, which links to Dragon Quest 2 HD-2D Remake.

Visit the Warlock of Doorlocks and acquire the Magic Key before setting off on your mission to rescue the Princess.
How to Get Magic Key and Effects

The Magic Key will unlock a locked door in Tantegel that leads to the Sunstone Sage, where you can acquire the Sunstone. This action is required to advance the story, so do it before rescuing the Princess!
Otherwise, she will be forced to return to Tantegel Castle if you return with her in tow while trying to acquire the Sunstone, and you'll lose your chance to see the True Ending.

With the Sunstone in your posession, you can now rescue Princess Gwaelin from Quagmire Cave as planned.
From here, you can bring the Princess around (avoid Tantegel Castle) and finish the game at your leisure with her at your side to see the True Ending.

Dragon Quest 1 HD-2D Remake does not have a buyback option for selling gear to shops. If you sell something, it is gone forever.
To keep from selling such items accidentally, the shopkeeper will warn you if the gear you are selling is rare. Take heed of the warning and try to avoid selling it unless you really don't want or need it around.

You can remove cursed item by speaking to the Priest in Tantegel Town and asking for a Benediction to remove it for free. This is useful just in case you accidentally equipped the cursed equipment.
How to Remove Cursed Equipment

You have the option to join the Dragonlord before engaging him in the final battle! This option triggers the game's Bad Ending, but will ultimately cause you to wake up back at Rimuldar, where you realize you were having a dream.
Choosing this option has no impact on the ending, and is mostly an easter egg but you will have to go through the entire Dragonlord Castle again if you do so. You may wish to take it at least once, though, as it unlocks the Dealing with the Devil Trophy/Achievement.
Endings Guide: List of All Endings

If you don't like the name you chose for the Hero at the start of the game, you can change the Hero's name by visiting the Citadel of the Monarch of Medals. Speak to one of the priests there to change your name.
Name changes are free, and you can do so as often as you wish.
There is a catch to the name-changing game, though: If you change your name to an unsual one with four or more identical characters in a row (such as Aaaaaa), you may invoke divine wrath.
You will be punished via a fine of 5,000 Gold on your next name change. Think carefully before choosing a silly name!

Stat seeds are now farmable in the HD-2D Remake. This means that you don't need to worry about saving or losing seeds that you find, and you can max out the Hero's stats if you can farm enough seeds.
