There are 7 types of stats in DQ1, with 5 of them relating to the Hero and 2 of them relating to his equipment. You can check these stats in-game by opening the Status menu.

The best way to increase the Hero's stats is by levelling them up. Outside of increasing stats, you'll also learn more powerful spells and abilities which will greatly aid you on your journey.
EXP Farm: How to Level Up Fast

Since the Attack and Defence stats are tied to the equipment used, you'll always want to be upgrading and using better weapons and armour. Whenever you enter a new town, try to upgrade your equipment so that you're prepared for any challenges ahead.
Outside of levelling up, the only other way to increase the Hero's stats is by using stat seeds. These are limited consumable items that increase the seed's stated stat, so make sure not to miss these when exploring the world.

At the start of the game, the name that you give the Hero will dictate his starting stats. However, this won't affect his stats when levelling up, so the name chosen at the start of the game won't have any long term effects.
