HP is used to denote how much life the Hero has left. It gets reduced every time the Hero takes damage, and if it's reduced to 0, the Hero will fall in battle and die.
Death Penalty: What Happens When You Die?
The best way to increase the Hero's HP is by levelling up. This will also increase their other stats as well, making them a lot more effective in battle outside of just an HP increase.
EXP Farm: How to Level Up Fast
Aside from levelling up, using Seeds of Life will also increase the Hero's HP. However, these are limited in supply, and it's better to level up first if you don't need the immediate boost.
How to Get Seed of Life and Effects

During the story, you will obtain the Soul Sigil after talking to Rubiss in the Faerie Village. Aside from unlocking Souped-Up Skills, it will also passively increase your Maximum HP.
How to Get the Soul Sigil and Effects
The best way to heal HP is by going to a town and resting at an inn. This way, you can also restore the Hero's MP at the same time, and they'll be fully refreshed for the journey ahead.
If you're out in the field or inside a dungeon, where there's no nearby inn, you can heal the Hero by using recovery spells. However, this costs MP to, so make sure you're managing that resource as well in case you need MP to cast other spells in or outside of battle.
All Recovery Spells and Abilities
In the early game, Medicinal Herbs is a great way to heal HP since you don't need to be near a town or spend MP. However, once you gain more Max HP, you'll require more herbs to heal back to full, which in turn means you'll need more gold to purchase enough herbs to heal.
