Raidou’s title carries over into New Game Plus, reflecting your overall demon loyalty. Titles upgrade gradually as you gain loyalty points from demons through battles and interactions.

Even though certain aspects of the game don't carry over, the game still tracks the progress you've made to completing a trophy. For example, even if Weapons don't carry over, the game still knows which swords you've obtained in order to complete the achievement.
Trophy Guide and Achievements List

When starting a New Game Plus, your level resets to level 1, but you can still summon demons from your previous playthrough even above your level. However, you may have trouble confining new demons that are above your current level.

Yen and Materials will not be carried over to the next playthrough in New Game Plus. However, they can be looted again from the map and defeated demons. Be sure to explore thoroughly to restock early on.

Weapons that you've collected in your previous playthrough will not be carried over to New Game Plus. But there are new weapons that will be available in New Game Plus.

As expected in New Game Plus, your story progress and Case Files will reset to allow for replayability. However, some new Case Files will become available in your next playthrough.

Even if the Devil Chart carries over to New Game Plus, the demons that you have with you inside tubes don't. Before you start a New Game Plus file, make sure that you register them first so that you can resummon them later.

Once you've beaten the game at least once, starting a New Game Plus file lets you choose the Detective Legend Difficulty. This is the hardest difficulty level in the game, so make sure that you're fully prepared and have mastered the game's systems before taking it on.

A new side quest unlocks in New Game Plus where you must obtain the Bancho Uniform from Detective Kazama to unlock Raiho, who's a summonable Demon that can aid you in battle.
How to Fuse Raiho : Stats and Skills

New weapons are unlocked in New Game Plus, and they're much stronger than those from your first playthrough. Make sure to check what's new in the Sword Alchemy menu so you can see what items you'll need to make the new Special-type katanas.

Once you've reached New Game Plus, it's highly recommended to collect all 123 Demons and register them in your Devil Chart. This is because Raiho is NG+ exclusive, meaning you can only do this after beating the game.
As a note, the total number of Demons goes up to 129 if you have the DLC that adds 6 extra Demons.

Much like completing the Devil Chart, you can complete every single Case File in the game. This again is tied to Raiho, since the Side Quest to unlock him is NG+ exclusive, meaning it only appears after beating the game at least once.
List of All Case Files (Side Quests)

When you're in New Game Plus, the ultimate goal is to unlock all trophies and achievements so you can 100% clear the game. This can only be done in NG+ since certain trophies, like beating the hardest difficulty and collecting all weapons, can only be done at this point.
Trophy Guide and Achievements List

To unlock New Game Plus (Second Cycle), complete the game on any difficulty and create a Clear Data file. Load this file to begin a new playthrough with some progress carried over. Before starting the Second Cycle, you’ll have the option to select the hardest difficulty, Detective Legend.
