Whenever you level up and allocate stat points to Raidou, the choice will become permanent. While you can modify and boost your stats with weapons and incense, the choice you make when leveling cannot be reversed.
Best Build and Stats to Level Up
Once you've beaten the game and started a New Game Plus file, Raidou's stats and levels won't carry over. This lets you redo your stats from scratch if you weren't happy with how you allocated them in your previous playthrough.
What Carries Over to New Game Plus?

When you're prompted to input a name at the beginning, whatever name you put in cannot be changed later. However, the protagonist will still be called Raidou Kuzunoha by the majority of the characters throughout the game.

Throughout the game, there are short events that can occur, but they are also easily missable. For example, in Episode 1, if you talk to Narumi before getting the photo of Kaya later in the episode, you will receive 1000 Yen.
The rewards you get from these are inconsequential, so you can opt to skip them if you wish. However, this does add to the overall experience of the game, and it's recommended to find and experience all of these short events.

Throughout the game, you will visit locations that cannot be revisited once you move on. Make sure that you fully explore every area so that you don't miss anything while playing.

During Episode 11, you will have to make a choice regarding your Demons, which will result in almost all of your allies being removed from your reserve. Thankfully, you can circumvent this by registering your Demons in the Devil Chart beforehand, letting you resummon them after the event is over.

There is a set of Case Files called Swordsmithing that requires you to upgrade to a specific weapon tier to complete the side quests. If you upgrade past the requirements, like upgrading to Tier 4 when you need Tier 3, you won't be able to complete the quest.
Make sure that before you continue to upgrade your weapon, go back and submit the Case File so that you don't miss completing the quest.
Thankfully, you can get multiple copies of the base sword, Renki. This means that if you do accidentally forget to submit and complete one of the side quests, you still have other opportunities to get and upgrade a katana.
