The best demons to fuse to beat Episode 1 are Koropokkuru and Mermaid. Using the recommended fusions, Koropokkuru will have a good range of AoE attacks, while Mermaid can swap between healing and dealing damage.
Also, as a note, the final boss for this episode is weak to Electric attacks, making both of these demons very useful for that fight, as long as you inherit Electric skills unto Mermaid.

The best demons to fuse to beat Episode 2 are Muu Shuuwu and Lilim. A Muu Shuuwu with Fire Resist is a generally strong demon, while a Lilim with inherited Electric attacks is amazing against the final boss for this episode since they use Fire and are weak to Electric.
It's also recommended to recruit either an Obraiyon or Turdak in Dark Ginza-cho so that you can use their Investigation Skill to deal with the other Fury Demons in the area.

The best demons to fuse to beat Episode 3 are Pabilsag and Jack Frost. The boss for this episode has a powerful Ice attacks, and these two demons naturally nullify or absorb the damage from the boss' Ice attacks.
However, the boss also nullifies these demons Ice moves, so you'll need to inherit other types of skills to deal damage to the boss.

The best demons to fuse to beat Episode 4 are Sati and Oboroguruma so that you can exploit the Electric weakness of this episode's final boss. However, Sati doesn't inherently learn Electric attacks, and you will need to pass some skills down via fusion.
As a note, Sati is overall a really strong magic caster, and you'll want her to inherit other elemental attacks so that you can continue using her past this episode.

The best demons to fuse to beat Episode 5 are Idun and Okuninushi. Since you can now have 2 allied demons in the remaster, AoE healing is now a lot more useful. This makes Idun an amazing support at this stage of the game, and she can also be a great attacker with her high Magic stat and inherited Fire and Ice Skills.
As for Okuninushi, he's a really good Ice attacker thanks to the Bufudyne skill. However, he'll need to inherit the Fire Resist skill since he has a crippling weakness to Fire attacks.

During Episode 6, there are no important boss battles that you need to prepare for, so you can use any Demon that you wish for this part of the game. However, it is recommended to have a Volt Demon with you so that you can use their Investigation Skill to get items while you're at the Amazing Science Lab.

The best demons to fuse to beat Episode 7 are Yoshitsune and Cybele since they resist a ton of different elements. Make sure that you also inherit Resist Passive Skills on them so that you can remove their weaknesses.
The final boss for this episode likes to change their weakness, and you'll want to make sure that you and your Demons bring Fire, Ice, Electric, and Physical Skills to counter him.

The best demons to fuse to beat Episode 8 are two Qing Longs. This is because the final boss for this episode is weak to Ice and they also use Death and Mind Skills. Thankfully, Qing Long is perfect to deal with them, and bringing two makes the fight very easy.

During Episode 9, you will be visiting three different locations, with each area having enemies with different weaknesses. This means that the best demons to beat this episode will change depending on which location and demons you plan on taking on.

The best demons to fuse to beat Episode 10 are Arahabaki and Power. As soon as you unlock the ability to fuse Arahabaki, do so immediately since it's a powerhouse of defensively, and can be extremely useful for the rest of the game. As for Power, it is an overall solid demon with a good balance of strength and defense.
As a note, make sure that you have other usable demons in your stock since the final boss for this episode has the ability to unsummon demons, and they cannot be re-summoned for a certain period of time.

The best demon to fuse to beat Episode 11 is Arahabaki. As mentioned in the last episode, this demon is extremely strong defensively, and nullifies most of the attacks from the final boss of this episode. Just make sure that you Safeguard it whenever the boss gets close so that it doesn't take any unnecessary damage.
Also, before approaching the final boss for this episode, save all of your demons in the Devil Chart. If you don't do so, you'll lose the demons that you don't bring with you to the fight.

The best demons to fuse to beat Episode 12 are Arahabaki and Vritra. You will be fighting powered-up versions of bosses you've previously fought, so you'll want to use demons that have a wide range of defenses and attacking skills.
Later on, once you're about to face the final boss, switch out your demons to Yamata-no-Orochi and Decarabia. The first phase of the final boss likes to use Gun attacks, and these two demons can easily tank those hits.

While you can technically use any demon to progress the game, it's highly recommended to fuse demons specifically made to defeat a boss. Make sure that you get demons that can target down their weakness while also resisting the attacks from the boss.

It's recommended to have at least one strong support in your party just in case you need to heal or remove status ailments. Thanks to Skill Inheritance, you can always use your best support demon to make an even better one with stronger supporting capabilities via fusion.

If you want to make the strongest demons possible, you'll want to pass down Element Boosting Skills via Skill Inheritance. This way, you'll be able to maximize the damage of that element, which in turn does a ton of damage to enemies that are weak to that element.
List of All Passive Skills and Effects
Aside from increasing the damage output of your allies, you should also make sure that you pass down Resist Passives to overwrite the weaknesses of your Demons.
