Best Stats to Max: Magic and Vitality

It's recommended to level Magic first for your build since it increases the damage you deal with spells, as well as decreases the damage taken from magic attacks. Also, it's a lot stronger in the remastered version since it increases the stats of two demon allies instead of just one in the original game.
After that, you should prioritize levelling Vitality next since it makes you a lot tankier, increasing both your HP and defense against physical attacks.
Max Out All Stats with Incense
As a note, there are Incense items in the game that allow you to raise Raidou's stats by 1. If you collect enough of these, you'll be able to max out all of his stats at 40 each.

Weapons Also Increase Stats
Katanas in this game will also give Raidou increased stats depending on the weapon-type used. Swords increase Magic and Luck, Spears gives a balanced increased to everything, and Axes increases Strength and Vitality.
To unlock new weapons, you'll need to progress to Episode 3 first. Once you're there, you can perform Sword Alchemy at the Goumaden to upgrade Raidou's katanas.
What is the Maximum Stat Value?
Stats Values Cap Out at 40
Raidou's stats have a maximum value of 40, and won't go any higher if you invest more points via level-up or weapons. If one of your stats is already maxed out, then level up something else in your build instead.
Can You Reset and Respec Stats?
No Option in the Original Game
As of now, it's unknown if you can reset or respec Raidou's stats in the remastered version of the game. However, if it follows the original version, then there is no option to do so.
