Best Materia for Early to Mid Game

Early Game

Up to Chapter 3
Materia Reason
Fire Fire Has quick startup and is easy to hit. Out of the 3 basic attack Materia it is easiest to use.
Thunder Thunder Thunder Blade is also easy to make use of. If you have high MP, go with Thunder, and for high Magic, go with Thunder Blade.
Blizzard Blade Blizzard Blade As regular Blizzard can be hard to land on most enemies, this is the better Materia for enemies weak to Ice. Since it uses AP, it allows you to save MP for other attacks, and its AOE is great for hitting nearby enemies.
HP Up HP Up HP is extremely important in this game since some enemies' abilities do so much damage on impact, so this will help prevent getting OHKO'ed. If you master this Materia, be sure to then build a new one, then Fuse the two HP Ups together.
Cure Cure An essential magic for healing. Potions will act quicker, so use potions in emergencies, and Cure when you have a little bit of leeway.

Mid-Game

Chapter 4 ~ Chapter 8
Materia Reason
Fira Fira
Firaga Firaga
Fira and Firaga will launch two and three fire balls respectively. Firaga is especially powerful and if you raise your Magic, it will allow to take out many enemies by standing at a distance and spamming it.
Blizzaga Blade Blizzaga Blade Use Blizzard Blade from the beginning and power it up. This will raise its power.
Dispel Dispel Many bosses use Barrier from mid-game and soak up damage. This will let you get around that.
Cura Cura Fuse the Cure materia you have mastered to get this. However, it will cause the MP used up to increase, so if Cure is enough to heal you completely in most cases, you can stick with it instead.
Barrier Barrier
MBarrier MBarrier
Allows you to halve the physical or magic damage taken from enemies for a short time. Barrier is overall slightly more useful. If there is a particular Magic you want to defend against, you can use Accessories instead.
Status Ward Status Ward Allows you to avoid status effects that you are able to inflict with equipped Materia. If equipped alongside Hell Blizzaga, it will make you immune to all enemy status effects.
Power Osmose Power Osmose
Osmoga Osmoga
Very powerul when combined with shooting multiple Firaga blasts. When your MP drains from using Firaga, using Ethers or Osmoga to avoid dying should help you clear 5~6 Star Missions.
