The best and easiest way to deal with a Cyclops is to freeze them using the Northern Wind Bomb and attack them with a fully charged Rend from behind. It is possible to instant-kill a cyclops provided that you dealt enough damage with your Rend.
Another good way to deal with the Cyclops is to constantly protect yourself with the Quen Sign while attacking it in between its large and slow attacks. If you feel like you need time to collect yourself, you can use the Axii Sign to enrage it and use that time to recover somewhere outside the cylopses range of attack.
You should use your Silver Sword and coat it with Ogroid oil to deal bonus damage to them. Prepare Northern Wind Bombs if you plan to try and one-hit-kill the Cyclos with Rend. You can also prepare some bombs that deal a decent amount of damage to the monster like Grapeshot Bombs and Dancing Star Bombs.
