The option to choose between Casimir or Quinto comes up during Open Sesame: The Safecracker in The Witcher 3. Read on to see the different outcomes should you choose Casimir or Quinto!

During the mission Open Sesame: The Safecracker, you'll have the choice to recruit Casimir or Quinto. The safecracker that you'll choose will dictate the combat scenario during the heist.

Casimir and Quinto will always side with one of the Borsodi brothers. Should you choose to kill a Borsodi brother which Casimir or Quinto sides with, you'll have to kill the Borsodi brother along with whoever sides with them during the end of Open Sesame!.
If you can decide early on which brother to kill, you can use this as a basis to choose either Casimir or Quinto to avoid fighting more enemies at the end of the quest.
Choosing Quinto provides you with a quieter approach during the heist as you'll be able to stall the negotiator. This allows you to avoid combat for longer, but you'll need to deal with the 4 Arachnomorphs later on.
Choosing Casimir puts combat into the forefront of the heist as you'll fail to stall the negotiator, prompting you to fight the guards in the area. However, you'll avoid falling into the pit where the Arachnomorphs are located.
