When you go look for Molly during the main quest, Broken Flowers, you'll be given a choice whether to participate in a horse race with Morvran. If you agree to race, they will then let you pick a horse of your own choosing. Winning the race will earn you a Superior Racing Saddle.

Pick Whatever Horse You Want
Your choice of horse here does not really affect your chances of winning as they are all identical which means you can win with any horse. The only thing your choice affects is which horse Morvran rides and which horse Maria bets on, which also don't lead to any consequences.
