Sea of Thieves has a page on their official website showing the current server status of the game. Check here for updates and to see if the game servers are down.
This page will also contain updates that indicate whether Beard Errors (connection errors) are currently affecting the playerbase. If you find yourself getting Beard Errors frequently, you can also check this page to learn if other players are affected.
Sea of Thieves servers go down for a few hours for updates and fixes to the game. When a new season is about to start, servers will usually go down in order to apply the new content updates.
Alternatively, players can opt to check out the Sea of Thieves Support social media account on X (formerly Twitter) for news regarding the server status of Sea of Thieves. Here they announce outages, scheduled maintenance, as well as error codes for the game.

Unfortunately, Sea of Thieves requires a working internet connection to play even when playing the newly released Safer Seas solo game mode. The game needs to connect to the Xbox live servers to save and sync your game progress such as collected cosmetics, currencies, and reputation levels.
