To obtain a chocobo, you need to talk to the trainer in the Calm Lands and ask her to let you ride one. 
You must then head to the entrance of the Calm Lands then head right to see a Chocobo feather.
Interact with the area the feather is placed to make the Chocobo Fly Leap.
Winning the race is particularly easy. Avoid poles and open chests to get advantages.Winning the race will net you the Cloudy Mirror which is necessary to obtain the Celestial Weapons.
Chocobo Race Tips and Walkthrough
It is necessary to defeat all of Belgemine's Aeons to complete the sidequest and obtain the Moon Sigil. This includes the three optional Aeons Yojimbo, Anima, and Magus Sisters. For more information about Belgemine, see the link below.
Side Quest Remiem Temple Belgemine Battle Tips and Walkthrough
To obtain the Magus Sisters, you must have the Blossom Crown and Flower Scepter to unlock the seal in the Chamber of Fayth. Head to the Chamber of Fayth behind Belgemine and use the items needed to get the Aeons.
