The max level for Geralt is currently capped at level 100. Once you are able to reach level 100, you will stop getting XP for doing quests and killing monsters. Grinding to level 100 can be really hard because the XP you get from quests will be reduced so much that it will be faster to level up by killing multiple monsters for 2 XP each.
There is a way to increase or remove the level cap, but this requires modding the game or changing the script in the game's files which can only be done on the PC.
When you are able to reach the max level for Geralt, the monsters' levels will also increase as well. But do not worry about this, since Geralt's level is capped at level 100 the highest level for any monster you encounter will be capped at level 105. Since Geralt is capped at level 100 and the monsters' levels are capped at level 105, you will never encounter a monster with a red skull icon during your playthrough.
