There are tons of items that you can purchase from different shops that does not help you progress in the game. Below is a list of all the items you must prioritize on purchasing from shops that can greatly help you throughout the story and to get stronger.
Diagrams are used to craft items, you can find many diagrams from shops. Diagrams are used to enable the crafting of equipments on armorers and blacksmiths. While maps provides you quests and the locations of the diagrams. Be sure to purchase Diagrams and Maps as soon as you can to craft better equipments, especially if they are for crafting witcher gears.
Later in the game once you get stronger, you will be able to combine multiple Glyphs and Runestones with the same name in order to create a better rarity of that item which can be difficult to obtain from looting.
Some shops will sell gwent cards on their store for a cheap price. These cards may not be powerful cards or rare cards but they can provide you more options when trying out different decks.
Repair Kits have 3 different rarity for both Weapons and Armors. These Repair Kits will come in handy during your long adventures allowing you to repair a percentage of the durability of your item.
