A new mechanic introduced in the game is the ability to parry your foes by pressing the L1 button right before a melee attack hits you. A quick in-game tutorial for this will be available during the main mission One Thing at a Time.
While this ability may be easier explained than done, a good way of making sure parries are the most effective is to watch the character model of your enemy. Observe your enemy's attack animation and right before an attack connects, hit L1.
Timing plays a big part in how effective a parry is. While parrying early is safer, it's also less effective than waiting for the last second before pressing L1.
Thankfully, you can practice your parry timing by fighting normal mobs and parrying their heavy attacks instead of dodging it. This lets you learn the right timing for it without getting punished too heavily. The timing window can also be adjusted depending on your difficulty settings.

Parries will only work against melee attacks on your character. While dodging would suffice for most situations, parrying would be a better choice when facing stronger enemies such as Brutes.
Successfully parrying attacks also stagger enemies, which gives you a window to deal a decent amount of damage without the risk of getting hit.
