The Type of a Monster will determine what Oil it is weak against. For example, Monsters of the Necrophage Type will receive 10% extra damage from Swords coated in Necrophage oil.

You can only encounter Hyms twice in the game which are in the Side Quest: Possession and the Hearts of Stone Main Quest: Whatsoever a Man Soweth.... You can complete the game without having to do battle with the Hym in the Side Quest: Possession if you make the right choices and you can skip doing combat with the Hyms during the Hearts of Stone Main Quest: Whatsoever a Man Soweth....
If you still chose to do battle with a Hym, the best way to deal with them is to throw a Moon Dust Bomb at them to keep them corporeal and allow your sword strikes to damage it. On the second phase of the Hym battle during the Side Quest: Possession, you can use your Igni Sign to light up the candles around the cellar to keep the Hym corporeal instead of throwing Moon Dust Bombs at it.
You should use your Silver Sword and coat it with Specter oil to deal bonus damage to them. Prepare Moon Dust Bombs to force it to become corporeal so you can attack it with your Silver Sword.
