The Type of a Monster will determine what Oil it is weak against. For example, Monsters of the Necrophage Type will receive 10% extra damage from Swords coated in Necrophage oil.

You can encounter this fight during the Main Quest: Wandering in the Dark. Keira Metz will be there to help you during combat.
The best way to deal with Nitrhal is to dodge his slow attacks and use that opening to attack him from behind. When he has taken enough damage he will put up a shield which will make him regenerate at a rapid rate and a portal will open that summons Hounds of the Wild Hunt.
During Nithral's shield phase quickly dispatch of the Hounds using the Igni Sign or by throwing Grapeshot Bombs and Dancing Star Bombs. Once all the Hounds have been eliminated he will go back to normal and he will start a shield phase again once he takes enough damage from you.
You should use your Silver Sword and coat it with Elementa oil to deal bonus damage to all of them. Prepare bombs that can damage multiple enemies at once like the Grapeshot Bomb and the Dancing Star bomb to quickly kill the Hounds that spawn through the portal.
