Upon reaching the second floor of the church area in Chapter 7: The Siege Part 2, there is a gap you can jump across which has a blue-marked door on the opposite end. Shield bash through and find a wall you can climb up. Inside is a Gold Trail and a Pinky Rider Toy.

Starts Appearing in Campaign Chapter 1: Village of Khalim

The Pinky Rider mounts on a tough Pinky mount that allows them to be mobile while they fire tracking projectiles at you. Dealing enough damage to either the Pinky or the rider allows you to eliminate the rider with a Glory Strike, disabling any projectile attacks from this enemy. However, it's easier to hit the Glory Strike threshold when hitting the rider than the mount.

Codex Entry

Reptilian steeds of the archer-class demons, these horned quadrupeds bring speed and ferocity to Ahzrak's invading force. Spawned in the hellfire pits of the Umbral Plains, the "Pinky Riders," as the Sentinels call them, are discarded by the demon prince the moment their war-torn bodies falter. Riders choose their mounts for fleeting glory in the underworld's halls, yet these beasts are no loyal companions. Many a Sentinel has witnessed the horrors of Pinkies turning on their riders, feasting on their flesh amid the chaos of battle.
