The best way to deal with Barghests is to constantly be moving by dodging or rolling away from their attacks and once you see an opening, hit them with the Aard Sign and rush in to kill them. The easiest way to do this is to wait for them to charge at you before you hit them with Aard. After doing that, you can roll towards them and quickly kill them with multiple sword strikes.
Another good way to deal with them is to plant multiple Yrden Sign traps to slow them down and give yourself an opening to strike in between their attacks.
You should use your Silver Sword and coat it with Specter oil to deal bonus damage to them. Prepare Moon Dust Bombs to prevent them from entering their ethereal form.
