How to Beat Cowgirl in the Wilderness (Cowgirl-1) Boss
Dodge Bullets and Fling Barrels
You won't be able to damage the Grape Cowboy immediately as you first need to stun it.
The boss will use his gun to shoot bullets but will shoot out a barrel every second shot. Use Cowgirl Peach's lasso to grab the barrel and fling it towards the boss.
Be careful though, as the barrel will break if it gets hit with the bullets. Try to dodge the projectiles first before throwing the barrel.
Use Lasso to Throw Boss When Stunned
After throwing a barrel towards the boss, it will get stunned. This is your chance to round up the boss and damage it with your lasso!
You won't be able to lasso the boss when it is not stunned and will get deflected if you try, so you need to stun the Grape Cowboy with a barrel first.
Dodge Charge Attacks
After throwing the boss into one of the wooden boards at the back of the stage, it will get angry and begin to charge towards Peach.
Simply run away from where the boss is and avoid going to the area where it is charging.

How to Beat Cowgirl at Dusk (Cowgirl-2) Boss
Dodge the Falling Rubble
At the beginning of the train chase, you won't be able to approach the runaway train immediately. You first need to dodge the rubble that are falling ahead of Peach. Move up and down the level to avoid getting hit.
Throw Barrels and Dismantle the Train
After dodging a few objects, the stage will darken and a barrel will fall down from the right. Grab it with your lasso and throw it towards the exposed end of the train to slow it down. Do note that the train will move up or down, so aim properly!
Once you hit the train and it slows down, the rear wheel be highlighted. Line up with the wheel and fling your lasso again to slow down the train!
Avoid the Boulders
After removing the train's wheel, Peach will run ahead of the train and will be chased by the Sour Grape. All you need to do is avoid the incoming boulders to avoid getting damaged.
Grab the Chimney
Once the train hits the giant boulder, it will get completely derailed and will slowly fall down. The train's chimney will then be highlighted, prompting you to lasso it to finis the level!

Throw Barrels Towards the Train
The whole boss fight for the third Cowgirl Peach level is pretty simple as you only need to throw barrels at the large train that's chasing Peach and the Cowboy Sparkla.
The barrels will float along the foreground of the level, so just keep lassoing and throwing barrels at the train until the end of the level.
If you're able to protect the leftmost stage coach from being destroyed by the train, you will get a Sparkle Gem!

Sparkle Gem
You can get the Cowgirl levels' final Sparkle Gems after defeating the bosses. With the exception of the train boss in the last Cowgirl Peach level, you won't miss these Sparkle Gems as defeating the bosses are required to finish the level, so you'll be able to collect some even if you miss the other, more hidden Sparkle Gems.
