You need to complete all levels in the second floor of the Sparkle Theater lobby and defeat Light Fang to unlock the Dashing Thief Rehearsal.

There are more than enough Gems for you to get through the stage with a Gold Trophy. Feel free to leave some more tempting Gems behind in favor of your safety.
Drafts won't alway help you in getting more Gems and some would actually lead you into even more danger. Just relax and steer in the opposite direction to counter it if you find yourself in a pinch.
There is a small area around Peach where she will collect Gems even though she isn't touching them. Use this to your advantage when you can.
A good way to approximate the size of this area is that it's around the same area as the Spotlight shining on Peach.
The locations of each Gem and drone in this Rehearsal will not change in between runs, so it can be useful to take note of where the Gems are and make a route of where to go or which areas to avoid.
