You'll be able to unlock more outfits for Peach and Stella if you collect Ribbons, which can be obtained either by helping Ribboner, the gentleman Theet. inside levels, completing Action Rehearsals, or buying them at the Shopkeep.

How to Change Outfits and Ribbons

Choose Wardrobe in Pause Menu

You can change Outfits in the pause menu of the game. Simply press Start and select Wardrobe to change outfits.

Do note that you'll only be able to change outfits in the lobby theater.

What are Outfits?

Peach and Stella's Clothing

Outfits are the clothing Peach and Stella are wearing. For Peach, her outfits are different designs for her dress, while Stella's are the colors of her ribbon-like body.

Different from Transformations

Outfits are different from Peach's Transformations. Outfits change Peach and Stella's appearances, whereas Transformations give Peach new abilities inside the game's levels.
