The Type of a Monster will determine what Oil it is weak against. For example, Monsters of the Necrophage Type will receive 10% extra damage from Swords coated in Necrophage oil.

You can encounter this fight at the end of the Side Quest: There Can Only Be One. The best way to deal with him is to make him stagger and use those openings to attack him with multiple sword strikes. You can do this by casting the Aard Sign or the Axii Sign on him to stagger or stun him in order for him to give you an opening to attack.
You should use your Steel Sword and coat it with Hanged Man's Venom to deal bonus damage to them. You can prepare some bombs like the Samum Bomb in order to stun him when he is vulnerable.
