You are guaranteed to encounter Hulks in Eliminate Automaton Hulk missions regardless of the difficulty you choose.

If you are fighting it alone and do not have the proper weapons to defeat a Hulk, the easiest way to kill one is to simply use explosive Stratagems such as the Orbital Precision Strike!
Best Stratagems and How to Unlock
Another Stratagem that can one-shot a Hulk is the Anti-Materiel Rifle. To kill it, shoot at the Hulk's head, the glowing red light at the front of its body. You can also target its arms with this support weapon.
The Hulk is the target of the Let's call it a draw achievement, where you must shoot off both its arms and extract while it's alive. Several support weapon stratagems can damage the arms, including the Railgun, Recoilless Rifle, and Anti-Materiel Rifle.
It's recommended to try getting this achievement with Defend missions like Eradicate Automaton Forces at higher difficulties. This way, you can extract quickly while avoiding the Hulk that's lost both arms.
Trophy Guide and List of Achievements
Other than using Stratagems, you can naturally kill a Hulk by shooting the vents at its back. This is easy to do if there are other players to distract the Hulk.
It's a variant of the Hulk that uses rockets as its weapon. When encountering this variant, find a cover quickly since its rockets can one-shot you!
The Hulk Scorcher uses a flamethrower as its main weapon. It's best to deal with this variant from afar to avoid getting burned.
The Hulk Bruiser is a variant that wields a machine gun as its weapon. Like the others, it has the same weak spot.
