There are 44 Heart Pieces to collect in order to increase your maximum health. They are found through exploring, defeating enemies, and finding Treasure Chart rewards.
Once you have all Heart Pieces, as well as all the Heart Containers from defeating bosses, you will have 20 Hearts in total.
Heart Piece Locations: All 44 Pieces of Heart

There are 61 Charts in total to collect and find Treasures from. Keep in mind that some charts have different locations and rewards depending on the version. One chart in the original version may differ in the HD remake.
While both versions of the game have the same number of charts overall, the HD version has more Treasure Charts and less Triforce Charts.

Empty Bottles can store recovery items such as Fairies and Potions for later use. There are 4 Bottles to find throughout the game.

You can get upgrades for some of your equipment. This will improve both your exploration and combat prowess.
All Upgrades and How to Obtain Them

There are 6 Big Octos you can defeat in the game. Seagulls typically circle above the area that they spawn on.
Once you defeat a Big Octo, it will give you rewards such as upgrades, Heart Pieces, and Rupees.

You may spread All-Purpose Bait near the Fishman in each quadrant to make them surface. This will give you a map of the island in that quadrant, its name, and a short description of it.

You can earn a Gold Membership by purchasing 60 items from Beedle's Shop Ship.
After you have the Gold Membership, you will receive a single-use Fill-Up Coupon in the mail. If you use this in any of Beedle's Shop Ships, it will recover your HP and Magic, as well as replenish your supply of bombs and arrows.

There are 3 types of potions in Wind Waker. The Red Potion recovers health, the Green Potion recovers magic, and the Blue Potion recovers both.
Unlocking a potion for the first time will require you to bring 15 Chu Jellies of the same color. The Blue Potion is the most difficult one to unlock, as you will need to find nearly all Blue ChuChus to get enough Blue Chu Jellies.

Once you return to Outset Island, Link's Grandma will be sick. You may use a Bottled Fairy near her in order to cure her illness.
Healing her will unlock the Elixir Soup. It is a powerful recovery item that can completely heal your HP and Magic.

There are 134 figurines to collect for the Nintendo Gallery. To get a figurine for a character in the game, you mainly need to get a pictograph of them using the Deluxe Picto Box.
You can have figurines made by showing your pictographs to Carlov in Forest Haven.

There are items that are not necessary for you to complete your quest. However, you may obtain them for completion and for further convenience.
You may complete the Trading Sequence side quest to obtain the Magic Armor. In the original version, you can obtain the Hero's Charm in the same quest.
In the HD version, you must complete the Savage Labyrinth to obtain the Hero's Charm.

Although most songs are required in order to progress the story, the Song of Passing is optional. This is learned from Tott at Windfall Island.

You can learn the Hurricane Spin technique from Orca at Outset Island by giving him 20 Knight's Crests. This isn't required to progress the game, but it's a powerful move that you can make use of in your adventure.
Orca's Combat Training Mini Game Guide

There are 9 Mini Games that you can play to get useful rewards. These mini games can be played an unlimited number of times. This means that the player can keep retrying until they get the rewards that they need.
List of All Mini Games and Rewards

After you rescue Tingle, you can find 5 Tingle Statues in different dungeons. In the GameCube version, you must use the Tingle Tuner, but they can be uncovered by a normal bomb in the HD version.
Keep in mind that you can only collect Tingle Statues on GameCube and the Wii U. While you can obtain the Tingle Tuner while playing on the Switch 2, you do not have the ability to use it.
How to Use the Tingle Tuner on Switch 2

Wind Waker does not reward anything upon 100% completion. However, collecting every item and upgrade will make going through the game a less tedious experience.
