Don Torrisi uses strong attacks more than light attacks so you should always focus on dodging the entire fight since it's more reliable. You can't parry strong attacks but you can dodge both strong and light attacks.
The Don also uses a string of three consecutive strong attacks often, all with different timings. Performing a perfect dodge allows you to counter and stop the attacks.
You can dodge out of the way and out of reach of him to play it safe. If you get enough practice or are confident enough, perfect dodges lets you get some hits in.
He will also has a lot of other strong attacks he can use during the fight, watch out and take your time to learning all these timings.
The duel has no time limit so take as much time as you need playing it safe. Avoid rushing in with attacks and only go for dodge counters and guard breaks throughout the fight. It's too dangerous to leave yourself open by making the move first. Parries are also great if you're confident enough.
Don Torrisi often guards which you can break with a strong attack and get some hits in. However, if you initiate the strong attack too late, he stops guarding and uses his own strong attack which is almost guaranteed to hit you during your animation.
If you want to do a guard break for some hits, do it as quickly as you can to avoid getting baited.
In the last phase of the fight, the Don will start using dirty tricks and throw sand at you. You can dodge this sideways to avoid getting blinded. You can also stop this by getting a quick hit in if you're fast enough.
If you get hit at any point in the fight, you should just reload to the last checkpoint to get another chance for the achievement. Get some practice in with enough tries and you'll be able to get the achievement.

The Worthy Opponent achievement requires you to beat the final boss, Don Torrisi, without getting hit even once. The fight takes place in Chapter 14 after you get out of the mines.
If you take a hit during the duel, you should reload to the last checkpoint so you'll have another chance at the achievement.
